Co-founder John Russo helped design our specialized facility with one goal in mind: to preserve the integrity and flavor of every cuy we process. From climate-controlled holding rooms to precision butchering stations and vacuum-sealed packaging lines, every detail is engineered for freshness, safety, and quality.
